Today I will tell you how to make a piece of culinary art from ordinary millet. The most important thing in this porridge is the additional ingredients, depending on which it plays with new colors every time.

Ingredients for porridge (for 1 serving):

* Millet – 50g.

* Water/milk-approximately 150 ml

• Mashed baked pumpkin-3-5 tbsp. l. or to taste

* Aromatic cheddar/gruyere – the more, the tastier))) But I put 20-30g, grate or finely chop.

* Dates – 3-4 pcs.

Cinnamon-0.5 tsp

. * Salt-to taste

Butter is optional, I do not use it, I have enough cheese

Ingredients for topping (the possible options are listed below, you do not need to put everything at the same time):

* Nuts are better than pecans or walnuts (a handful)/pumpkin seeds

* Nuts + thin slices of cheese, so that they have the opportunity to melt on the porridge

* Mushrooms fried with oregano and sage + some pine nuts. It turns out something like a risotto.

Caramelized bacon + maple syrup • Nuts (handful) + orange zest (from a quarter of an orange)

How to do it.

1. Bake a pumpkin (better butternut or Hokkaido) in the oven (recipe here). Then you can make not only porridge from it , but also pumpkin soup, tortillas, hummus and other dishes.

2. Wash the millet until the water is transparent, pour it with boiling water and drain the water. So the porridge will definitely not be bitter. Then pour the millet with water/milk, add salt and cook until tender under the lid, stirring occasionally for about 35 minutes. If desired, you can remove the foam.

2. While the porridge is cooking, blenderim pumpkin together with washed dates and cinnamon in mashed potatoes. You should get about 5 tablespoons.

3. As soon as the porridge has become viscous and boiled, add the pumpkin-date mixture to it, mix, let it boil for a couple of minutes. We try the salt/sweetness/sufficiency of the pumpkin in taste. What you need-add, throw in the cheese, mix until it is completely dissolved and try again. It should turn out not liquid and not too viscous, moderately aromatic, sweet and creamy-cheesy. Find this balance, then turn off the stove and let the porridge stand for 5 minutes.

4. Serve with any of the toppings described above.

The bowl is a deep dish in which you are quick, tasty and beautiful can combine correctly is a useful meal. Usually there is a portion of complex carbohydrates (whole grains, root vegetables), a serving of protein (legumes, tofu, mushrooms, meat, fish/seafood, poultry, cheeses, eggs), lots of vegetables/fruits (fresh or cooked) and some fats (nuts, seeds, avocado, nut pastes, olives, sauces based on oils).

Ingredients (for 1 serving):

• Boiled buckwheat, you can use any (you can substitute quinoa) – 3 tablespoons,

• 1 chicken egg

• Half an avocado,

• Mushrooms – 3-4 pieces (I have mushrooms),

• A small tomato or 4 cherry tomatoes,

• Balsamic cream (optional, but very recommend) – on the tomato a bit

• Truffle oil (optional but very recommend) – a bit on the mushrooms,

• A little lemon juice and olive oil – all to sprinkle on top (also optional)

• Salt/pepper/spices/herbs/sesame seeds – optional.

Also you can put cheese on it (cheese is particularly relevant) and any salad leaves. You can stew them together with the mushrooms. Spinach, for example, very suitable.

Ingredients for soy mayonnaise:

It is based on universal sauce Urbachwhere salt substitute for soy sauce.

• 3 tbsp tahini,

• 3 tbsp lemon juice/Apple cider or white wine vinegar,

• 1 tbsp olive oil,

• 1-2 tbsp soy sauce (depends on its type, place 1, then sample and add more if necessary),

• 1 clove of garlic, passed through a press (optional)

• 1 tsp miso paste (optional)

• 3 tablespoons of water (watch the consistency, add gradually),

• Pepper, to taste.

How to do:

1. Cooking buckwheat (roasted brown).

Tell method, and the number you define yourself, I usually cook 1 Cup, enough for 5-6 servings for this recipe.

Cooking buckwheat (unroasted green).

Here is a slightly different story. Green, I would not be subjected to excessive heat treatment. The proportions of buckwheat and water are the same as for brown.

4. Collect the bowl.

Delicious cauliflower soup with nutmeg

I don’t like soups made from ordinary white cabbage, but with cauliflower – very much;) So immediately and do not understand what it is, just feel that vkuuusny!

Ingredients for the soup:

• Cauliflower – 2 small kachna or 1 large,

• 2-3 tablespoons – oil for frying,

• 3-4 large yellow onion bulbs (don’t spare the onion, it gives the desired taste to the soup),

• 400 ml – almond milk (can be replaced with cow’s milk or cream, depending on your love of fat),

• 800 ml – water/vegetable or chicken broth,

• 4-5 cloves of garlic,

• 0.5 tsp – nutmeg,

• Salt – 2 tsp or to taste,

• Pepper – 2 tsp or to taste.

Oregano and sage are also very suitable. I don’t always put them in, according to my mood.

For satiety and increase the amount of protein in the dish, you can add a couple of handfuls of white already cooked beans to the soup. The main thing is not to overdo it, otherwise the taste will not be so bright. But don’t worry, it can be balanced by adding a little more spice;)

Ingredients for topping:

• Shredded cheddar cheese/cream cheese/blue cheese/Parmesan (you can also put the cheese in the soup itself, as you like).

For 1 serving 30-50 g of cheese. If Parmesan, 1-2 tbsp grated.

• Red caviar – 2-3 tbsp.

• Mushrooms baked or fried with thyme + pine nuts.

For any option, I recommend serving toast from bread

How to do:

1. peel, wash, and chop the Onion and garlic. Wash the cabbage, divide it into inflorescences, cut the stalk, and wash it again.

2. in a large saucepan, heat the oil and add the finely chopped onion, passer until very browned, then add the crushed garlic, fry for 30 seconds until fragrant and throw the cabbage with water/broth. Bring to the boil, reduce the heat and cook for 15-20 minutes, until the cabbage is soft.

If the cabbage is not completely immersed in the liquid, it’s okay, it will still be steamed. To speed up the process and cook evenly, stir the contents of the pan periodically.

3. after the cabbage is cooked, add the milk/cream and all the above spices to the soup. Grind the soup with a blender until smooth, taste, add more liquid or spices if necessary. Bring to a boil over low heat and turn off immediately.

4. Pour the soup on plates, sprinkle with freshly ground pepper and put any topping to your taste. If using cheese, let it melt a little.

In my photo, the soup is simple with croutons, balsamic cream and truffle oil. The simplest version, but it is no less delicious than the more complex versions)

By the way, if you put less liquid, you will get a great puree on the side dish or sauce for a hot dish.

Closed scrambled eggs with mushrooms and cheese

This dish surprises everyone! Fragrant melted cheese, sweet filling in a frame of fried eggs – just incredibly tasty stuff.

The filling can generally do any to your taste, here’s the best part in cooking technology;) this is Probably my favorite kind of submission of the eggs, well, after poached, of course))

The recipe is for 2 servings.

I like to use a mixture of Parmesan and Gruyere, or blue cheese with some neutral.

The specified form size I make about 500 g of sauce: 300 g of sour cream/yoghurt/milk, 150 gr. cheese (about 100 g of cheese type Gouda + 50 g aromatic Parmesan/gruyère/Roquefort) and 2-3 eggs. If you use less cheese, add the filling 1 egg to the quiche not lose shape.

You can certainly have a dish immediately, but I prefer it ostatici in the refrigerator, and then reheated before serving. So he’s like delicious and perfectly keeps the shape and not falling apart like freshly made.

Often I cook the quiche for the future. In this case, it is first necessary to fully cool at room temperature, then put into the refrigerator. Then I cut it in portions and freeze in a plastic container.

Salad with quinoa, vegetables, mushrooms and cottage cheese

Technology.

I often make blanks for this salad for a few days, then for 2 minutes to prepare it at any time.

Quinoa is best to cook a little less time (cooking time for each specific type of seeds look on the package), so she definitely kept the form for a few days. This is true more for white quinoa. Inarenou cereal I keep in the fridge up to 3 days. Can mix it with a small amount of vegetable oil, so it does not stick together.

I cook quinoa as directed on the package, since the method of cooking depends on the variety.

Feed.

For 1 serving, I usually put half an avocado, a handful of salad mix/spinach, 5 cherry tomatoes, no more than 100g. prepared quinoa 1-2 tbsp mushrooms, cheese, roasted vegetables, greens, sun-dried tomatoes, lemon juice/balsamic. Salt/pepper/nuts/herbs to taste. Oil sometimes do not add if it is enough of roasted vegetables and mushrooms. Mix everything and eat.

And such food can be taken by wrapping the salad in a rice paper in spring rolls. Very happy with it!

Best Ever Tom Kha Gai

I finally figured out the perfect technology and the proportions of the ingredients, Hooray!

First, a little about the soup Tom Kha.

Ingredients:

1. Broth.

Important. If you are using frozen meat, shrimp or mushrooms, you must defrost them and drain the water, otherwise the broth will become thin and tasteless.

3. Spices.

  • Galang/galangal/galangal (it’s just a different name of root) – 1 PC (30g). You can replace the ginger (30g) or put both the root.
  • Lemon grass/lemon grass/lemongrass – 3 sticks, if fresh, or 3 tablespoons dry.
  • The leaves of Kaffir/Kaffir lime – 4 PCs 8 PCs fresh or dry.
  • Hot chili pepper – 3 PCs.

  • Sweetener (palm sugar, Jerusalem artichoke syrup or any other sweetener you have) – 2-4 tbsp
  • 1 onion,
  • 2 cloves of garlic.

How to do:

1. Broth.

Pri long heat treatment the coconut milk loses its structure and breaks into flakes. I don’t like the consistency of soup, so have developed a hack to add the milk and cream at the end of cooking. If you love the perfect smooth consistency of the soup, I recommend to follow my method.

The most delicious mushroom sauce «the best» with truffle oil, cheese and thyme

This sauce really includes all the best from: blue cheese, Parmesan, and herbs, and truffle oil.

Fragrant, words can’t describe! With him any dish sparkle with new colors. To me it is more like a duet with meat (steak, meatballs, etc.), also the sauce is suitable for pasta.

Sauce recipe around (4 servings):

1. 1-2 medium onions (I have shallots) and fry in the oil for frying (I have ghee) until Golden, add 1-2 crushed garlic cloves, wait for the aroma and throw in about 300g cut into slices mushrooms, fry the mushrooms until it will turn brown. Mushrooms are suitable in principle any, but it would be best with chanterelles, Portobello, white.

2. At this time, breaks into pieces of 30-50g blue cheese and grate about 3st.l. the Parmesan. If some cheese, you can substitute it with Gruyere or some other fragrant variety. My 3-4 branches of thyme (can be replaced by 1H.l. dry).

3. To the skillet with mushrooms and onions, add 300ml. milk/cream, whole cheese, thyme leaves, a pinch of nutmeg, salt/pepper to taste and optional a handful of dried mushrooms, crushed into dust. I grind them in my hands.

Dried mushrooms is not at all, and you can do without this ingredient, but the sauce is different, so concentrated and very aromatic. Cook the sauce until cheese melt and thick (about 3-5 minutes).

4. Remove the sauce from heat, cool a few minutes, then add 3-4 tbsp of olive oil with truffle aroma and urgently apply!

Optional sauce can be punched in bleder (see photo below), but I like to leave it in its original form.

Mushroom scrambled eggs/omelet/Frittata with sage, thyme and Parmesan

Very tasty. The recipe is for 2 servings.

Important 1. I was not prepared with plain white mushrooms, and cremini or Crimini Mushrooms/Baby Bella Mushrooms. It’s such a kind. There are even more “ilitny” variety of mushrooms – Portobello Mushroom, which is usually more expensive cremini, but to taste the same;)

In any case, these meals brown varieties are much more intense and interesting flavor than white, I really recommend to try.

3. At the end of frying onions increase the heat and add 1-2 crushed garlic cloves, season with salt and pepper. Fry for another 30sec to a strong garlic smell, then put the mushrooms, cook stirring occasionally until mushrooms brown colour. Then make the mid-Pacific heat, add stuffing in the leaves of 1 stem of thyme and 2st.l. chopped sage leaves (about 10 leaves). Stir, wait for the intense flavor of the herbs before you pour the eggs.

4. While the filling is being prepared, prepare 4 eggs depending on your preferences: if you like omelette, beat the eggs with milk/cream/yogurt, if you like scrambled eggs, mix the eggs slightly, for the frosting, just gently break the eggs into a bowl without damaging the yolk.

5. As soon as the thyme and sage gave up their flavors of the stuffing, pour into the pan the eggs, I sprinkle on 2-3st.l. the Parmesan. Then cover with lid and on low heat fry until cooked eggs, or put in the oven for about 5-7min at 180-200C.
