Creamy pumpkin cheddar millet porridge with nuts + some more recommendations for serving

Today I will tell you how to make a piece of culinary art from ordinary millet. The most important thing in this porridge is the additional ingredients, depending on which it plays with new colors every time.

Ingredients for porridge (for 1 serving):

* Millet – 50g.

* Water/milk-approximately 150 ml

• Mashed baked pumpkin-3-5 tbsp. l. or to taste

* Aromatic cheddar/gruyere – the more, the tastier))) But I put 20-30g, grate or finely chop.

* Dates – 3-4 pcs.

Cinnamon-0.5 tsp

. * Salt-to taste

Butter is optional, I do not use it, I have enough cheese

Ingredients for topping (the possible options are listed below, you do not need to put everything at the same time):

* Nuts are better than pecans or walnuts (a handful)/pumpkin seeds

* Nuts + thin slices of cheese, so that they have the opportunity to melt on the porridge

* Mushrooms fried with oregano and sage + some pine nuts. It turns out something like a risotto.

Caramelized bacon + maple syrup • Nuts (handful) + orange zest (from a quarter of an orange)

• Pecans (handful) + caramelized pear (peel, cut not very finely, fry in ghee withjerusalem artichoke dill until brown)

How to do it.

1. Bake a pumpkin (better butternut or Hokkaido) in the oven (recipe here). Then you can make not only porridge from it , but also pumpkin soup, tortillas, hummus and other dishes.

2. Wash the millet until the water is transparent, pour it with boiling water and drain the water. So the porridge will definitely not be bitter. Then pour the millet with water/milk, add salt and cook until tender under the lid, stirring occasionally for about 35 minutes. If desired, you can remove the foam.

2. While the porridge is cooking, blenderim pumpkin together with washed dates and cinnamon in mashed potatoes. You should get about 5 tablespoons.

3. As soon as the porridge has become viscous and boiled, add the pumpkin-date mixture to it, mix, let it boil for a couple of minutes. We try the salt/sweetness/sufficiency of the pumpkin in taste. What you need-add, throw in the cheese, mix until it is completely dissolved and try again. It should turn out not liquid and not too viscous, moderately aromatic, sweet and creamy-cheesy. Find this balance, then turn off the stove and let the porridge stand for 5 minutes.

4. Serve with any of the toppings described above.

Where to use the whites left over from preparing other dishes

I have always disliked dishes in which only egg whites or only yolks are used in cooking. Cook, and then with the remaining parts of the egg you need to come up with something.

Over time, I developed my favorite recipes, where you can attach proteins or yolks. But these dishes are not always desirable, or the ingredients are not enough, and the eggs do not wait long. I needed a straight simple option for every day.

Hooray, now I have no problems with proteins!!! I put them in my morning oatmeal. Porridge turns out to be creamy, creamy, some incredibly cool.

Here the most important thing is to mix the protein very quickly into the already prepared porridge, otherwise you will get porridge with an egg. I tried different ways to optimize this process. As a result, I just whisk the protein before kneading into the porridge a little with water or milk, on which I cook the porridge, so the egg penetrates very evenly into the porridge texture.

Straight highly recommend to try! If you throw more nuts and berries on top, then straight mmmm…

My favorite toppings for various cereals

Just porridge (any cereal) and the same mess, but with delicious toppings – are two big differences. Your duty of oatmeal each day can be different. And sweet and salty. With nuts, berries, cheese, avocado, poached egg and other ingredients.

In this post I will gradually spread your favourite combinations;)

Oatmeal with grilled banana (fry only ripe bananas on medium heat until brown) and dark chocolate.

For 1 serving I take about half a large banana or 1 small. Chocolate just a square. Ruble finely with a knife and sprinkle until porridge and banana hot.

Oatmeal with fresh Apple, cut into thin slices, raisins and roasted pecans. On top of a little sprinkle with cinnamon. Optionally, you can pour maple syrup.

Cherry oatmeal vanilla coconut

Fast, beautiful and very tasty!

According to this recipe, you can prepare rice, semolina, millet porridge, as well as quinoa porridge.

For 1 serving:

1. 50 g of oatmeal, 50 ml of coconut milk, water (the amount depends on your preference for the density of porridge), a pinch of salt, natural vanilla and cinnamon to taste, 50 g of pitted cherries (fresh or frozen). Optionally, you can put Jerusalem artichoke syrup / honey to taste. Put everything except milk in a saucepan and cook the porridge almost until ready, kneading the cherry berries (this is done for color).

2. Towards the end of cooking porridge, add milk and cook the porridge. I usually mix the milk in the porridge, turn off the heat, and let it cook under the lid for a couple of minutes.

3. Try the finished porridge and add spices to taste, if necessary, as well as another 50g of berries, leaving them whole, mix.

4. Serve with a sprinkle of coconut chips or almond petals. You can also use coconut shavings, but it will not be as delicious as with crunch;)

Porridge for this recipe with blueberries is also very tasty, especially with nut topping topping.

Coconut oatmeal with strawberries and lime

Ingredients (for 2 servings):

100-120 G oat flakes,

100 ml coconut milk + water to taste, I usually do 50/50 and add water if necessary during the cooking process. The amount of water depends on the consistency of the porridge you like. You can cook exclusively on coconut milk without water, but it will be a very fatty porridge-I do not recommend it.

A pinch salts,

1 tbsp. L. syrup Jerusalem artichoke or taste,

0.5 tsp. ground vanilla,

Optional 1 tsp. coconut oil.

For topping:

200 g strawberries,

Juice and zest of 1 lime,

1-2 tsp. syrup Jerusalem artichoke.

How to do:

2. while the porridge is cooking, remove the zest from the lime (the smaller the zest, the tastier), then squeeze the juice out of it. Cut strawberries, fill it with lime juice and 1-2 tsp Jerusalem artichoke syrup.

3. Try the finished porridge, if you need something from spices-add to your taste, I usually add 1 tsp. coconut oil (this point can be omitted, but butter tastes better).

4. put porridge on a plate, top with strawberries and juice (!) and sprinkle with lime zest.

This is an amazing combination!

Coconut ginger oatmeal with thai mango

One of my favorite breakfasts, the combination is UNREAL!

Ingredients (for 2 servings):

100-120 g oat flakes,

100 ml coconut milk + water to taste, I usually make 50/50 and if necessary add water in the cooking process. The amount of water depends on the consistency of the porridge you like. I do not recommend cooking exclusively on coconut milk without water, it will be a very greasy porridge.

0.5 tsp ground ginger,

Pinch of salt,

1-2 tbsp. topianmbur syrup or to taste,

Optional 0.5 tsp ground vanilla,

optional 1 tsp coconut oil.

For topping:

1-2 ripe mangoes (depends on the size of the fruit, I like more))),

Juice of half a lime,

Coconut chips (not shavings). The shavings are not so tender and easy to chew.

How to do it:

4. Put porridge on a plate, top with mango and lime juice and sprinkle with coconut chips.

Vanilla oatmeal on the tea with milk and a topping of baked apples and nuts

This porridge is in third place after coconut porridge with mango or strawberries. Moreover, I do not like tea with milk, but I like this porridge)))

Recipe (for 1 serving):

1. 1 small Apple is Needed per serving, I usually bake a whole baking tray at once. Wash the apples, cut them into quarters, carefully remove the core with the seeds, veins and stalk, put them on a baking sheet with the skin down, sprinkle with cinnamon, sprinkle with water and bake until ready for about 25 minutes at 180C. You can do this in advance. I recommend using real Ceylon cinnamon.

2. 50-60g oatmeal + 75ml strong black tea (tastier with bergamot) + pinch of salt + vanilla 1/4 pod (can be replaced with extract or ground vanilla to taste) + a little water, mix everything and cook until almost ready. Towards the end of cooking, add your favorite milk (75ml) and cook the porridge. Usually I mix the milk in the porridge, turn off the heat and let it brew under the lid for a couple of minutes.

If you like to cook porridge with milk without water, please. If you like butter in porridge, then put it here, it will fit perfectly too.

As a result, the taste should be rich and creamy, like tea with milk, and vanilla and apples with cinnamon will give it a zest.

Oatmeal with poppy seeds and vanilla

Ingredients (for 2 servings):

100-120 g of oat flakes,

100 ml milk (any flavor) + water, I usually do 50/50 and if necessary, add water in the cooking process. The amount of water depending on the consistency of cereal that you love.

A smoothie with a couple of spoonfuls of oatmeal is a great alternative to porridge, especially when there is no time to cook.

Ingredients:

* 30g (small handful) oatmeal,

* 1 small ripe banana or half a large one,

* A generous handful of berries (I have fresh strawberries),

* 1 tsp sesame seeds, favorite nuts or nut urbech (this I add Not for taste, but for satiety),

* 1 tbsp chia seeds (this is also optional),

* A pinch of ground vanilla,

* A pinch of ground cinnamon,

* Any milk or water to taste, add gradually.

If desired, you can add a sweetener, protein or other spices.

Put everything in a blender and whisk until smooth. Adjust the thickness of the neck with the amount of milk/water.
