This cake is mostly made of bananas, cottage cheese, eggs, and cocoa. The banana flavor is barely noticeable — I tested it on banana-haters))) In the end, it turns out something like a brownie, but with tiramisu vibes.
The recipe is my mom’s, but I adapted it a little to my taste. Very simple to make, delicious, and at the same time healthy.
Ingredients:
Cake layer:
-
Bananas — 2 pcs. (about 270 g without peel)
-
Eggs — 2 pcs.
-
Cocoa powder (choose high quality, without sugar or additives) — 60 g
-
Baking powder — 1 tsp
-
Salt — a pinch
-
Optional: vanilla or vanilla extract (not vanillin) — just a little, to taste
Cream:
-
Cottage cheese (I like using 5% block-style) — 200 gYou can replace it with cream cheese, but then the cake will be higher in calories. In that case, you can use less butter — about 30 g will be enough.
-
Banana — 1 pc. (about 130 g without peel)
-
Softened butter — 40–50 g
-
Lemon juice — 1 tbsp
-
Optional: vanilla or vanilla extract (not vanillin) — just a little, to taste
Of course, if you want, you can add sugar to both the cake and the cream, but for me and everyone who tried it, it was delicious as is.
How to make it:
-
Blend all the cake layer ingredients until smooth. Bake in the microwave for 5–7 minutes.
I use a silicone mold about 15 × 20 cm. Let the cake cool completely, then slice it lengthwise into 2 equal layers.
If your mold is larger, that’s fine: just bake one flat cake and cut it into 2 equal parts.
You can also bake it in the oven at 180 °C until a toothpick inserted in the center comes out dry.
-
For the cream, blend everything until smooth. While the cake cools, chill the cream in the fridge — it will firm up a little.
-
Assemble the cake: spread half of the cream over the first layer, then the remaining half over the second. I like to use a piping bag to make pretty rosettes, but you can also just spread it with a spatula. Done!
-
Dust with cocoa powder before serving.
