Jerusalem artichoke is a perennial plant with positive yellow flowers and tubers somewhat similar to ginger. Syrup is produced from them. Does it taste neutral, like an unobtrusive variety of honey.

At the moment I use this syrup in cooking, as well as agave syrup., Maple and sometimes honey.
But globally, this is the same added sugar, and not something more “useful”. Have no misconceptions about this.
